From the lush pastures where our cows graze to the skilled hands of a certified master cheesemaker, our cheese is the product of patience. We take the time to do it right. That means a natural grass diet for our cows and small batches of hand crafted cheeses that capture the flavors of southern Wisconsin’s unique pastures and clean, limestone filtered water.

So, have patience. In time, grass becomes...cheese.

 

After one and a half years as a cooperative, the Edelweiss Graizers Coop has now grown to five family farms. You can read about each of us by clicking above.
  

Cheese may be purchased locally at the following locations: Miller’s in Verona, Metcalffe’s Sentry in Madison, Whole Foods in Madison, Willy Street Coop in Madison, The Sow’s Ear in Verona, and the Madison West Side Farmer’s Market at the DOT. The EGC has adopted a strong framework to promote intensive rotational grazing as our foundation. Our grass standards include:
-cow’s intake must be 60% or more grass
-farm must provide 1 ½ acres of land per cow for grazing
-no silages may be fed
-fencing must be moved every 12 hours to allow fresh grass to cows
